No bake maple peanut butter oatmeal cookies

On a lighter note, we have been making this very easy recipe (click here for the original recipe).

We’ve been mixing:

  • 2 cups of gluten-free oatmeal
  • A few spoonfuls of natural peanut butter (yes, Moses can eat peanut butter!)
  • Some maple syrup (we just pour it into the bowl until it feels like the right amount – approx. 1/3 of a cup) – the original recipe calls for honey
  • 1/2 cup of Enjoy Life allergy-free chocolate chips (yum, yum)

Sometimes we add a touch of rice milk if the mixture seems too dry.

DH also likes to create a version where he melts 1/2 cup of chocolate chips and pours it into the mixture. Moses is a purist and doesn’t like this version.

Mix it all up, spoon it into a muffin pan and throw it into the fridge.  If you just can’t wait, you can eat a few before throwing it in the fridge.

Easy, tasty, healthy and good!
